Cheese tart

I would recommend this tart for those who like cheese tarts. It is very easy to prepare, you can use either one type of cheese or several of your preference.

Cheese tart

PASTRY DOUGH

  • 160 g SR flour (AP flour + 3/4 tsp of baking powder)
  • 90 g cold butter, cubed
  • 60 ml milk (4 tbsp)
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • Rub the butter into the flour until it resembles the breadcrumbs (better to pulse in a food processor)
  • Add the salt, sugar and milk to bring mixture together
  • Knead lightly to form a dough
  • Shape into a ball, cover with the cling film and leave in the fridge for 10 min

FILLING

  • 200 g grated cheese (Emmental, Cheddar, Gauda, Mozzarellа, etc)
  • 2 tbsp grated Parmigiano
  • 150 ml sour-cream (creme-fraiche)
  • 50 ml milk
  • 2 eggs
  • 1/2 tsp sugar, pinch of salt, black pepper (optional)
  • roll out the dough to line a 22 cm tart dish
  • trim the edges and blind bake the pastry shell for 5-7 min at 220C
  • whisk together the eggs, milk, sour-cream, salt, sugar and pepper. Add cheese and stir well
  • pour over the filling, scatter the cheese evenly and bake for 25-30 min at 220C-225C until the filling is golden brown

The pastry dough is very tasty, short, but still very light. The tart is delicious with quince jam.
